Possum Cherry Pie is a snap to make! If you have ten minutes, that is all it takes to toss together this beautiful and very delicious pie. Another great thing about our recipe is that you don't have to bake anything.
Possum Cherry Pie
2 large cans of sweetened cherry pie filling, any variety
6 or more Little Debbie brownies, depending on how thick you like your crust
1 large container of whipped topping
5 to 7 drops of red food coloring (totally optional)
Non-Stick Cooking Spray
Although you can use any variety, the Little Debbie brand of brownies are always moist and roll out with ease as you make your brownie crust.
Spray a pie plate with the non-stick cooking spray. On a sheet of wax paper (you can also use plastic wrap, foil, cheesecloth or a wooden board) begin rolling out the brownies to form a crust. If you don't want to take the trouble to get out your rolling pin, simply press the brownies into your pie plate.
Next, tint the cherries a deeper shade of red with the food coloring if desired. Pour the cherries into your pie plate, then top with the container by mounding the topping into pretty peaks. You can garnish the top of your Possum Cherry Pie by crumbling up a brownie and dusting it over the pie. The pie can be eaten immediately or you can refrigerate it if you like your pies cold.
