Before leaving on your trip, place a container of whipped topping into your ice chest. By the time you reach your destination, it will have softened. Or, you can pick up a container before reaching your campsite. Spread the fresh potato bread with the jam, then pile with the topping. I've never had anyone try this that did not love it. When guests visit, they beg for it on two legs.

Also, you can use any type bread but potato works best, and the fresher, the better. I happen to favor a local bakery – which may also be in your area. Mrs. Baird's Potato Bread is very hard to beat, though the Kroger's variety will do great in a pinch as long as you purchase a fresh loaf. I hope you enjoy this high energy treat that can be served as breakfast or snack time!
